Song Period-Style Powdered White Tea
Fully hand-crafted from start to finish, this tea is represents the final product born from years of dedicated research into the processing and production of 抹茶 mǒchá (lit. “powdered tea”). Following guidelines detailed in texts dating back to the Song period (960-1279), wild white tea from Fujian province is hand-ground by mortar and pestle and sifted in a process that can take upwards to 3 hours for one container’s worth of tea. When whisked in accordance to forms outlined in the 大觀茶論 Dà Guān Chá Lùn (“Treatise on Tea”), written by Song emperor Huizhong in 1107, the tea produces a lustrous white foam. The flavor is otherworldly, unlike any other tea currently know, with earthy and floral tones of white tea, and a soft texture similar to Japanese matcha.
The energy of this tea is also worth noting, given that you are drinking both tea leaves and the resulting tea liqueur. While I find the process of grinding and sifting this tea to be quite meditative, the act of whisking and enjoying Song period-style powdered white tea is, in itself, a meditation, giving you a glimpse and close approximation to a style and practice of enjoying tea that was long lost centuries ago.

Notes of bright marigold flower, cucumber water, earthy spices, Fall leaves, and raw honey. A large, piquant mouthfeel, with a long-lasting finish and lingering florals.

BREWING RECOMMENDATION:
3 - 5 grams (0.1 - 1.8 oz) of powdered tea per serving
Set powdered tea into teabowl
Pour 0.12 cup of boiling water into bowl and slowly knead tea powder into paste
Add 0.12 cup of boiling water into bowl and begin to whisk into a thin foam
Repeat previous step five more times until tea is whisked into a thick, lustrous foam
