雲霧 Yúnwù “Clouds & Mist” green tea from 政和 Zhènghé County, 福建 Fújiàn, China.

As the name poetically alludes to, this tea grows amongst the clouds and mist that cling to the high peaks of the high mountains of Zhènghé County in early Spring. Originally, these small green leaves were used by local farmers to produce white tea, however, ten years ago they began to produce a small batch as a green tea, drying the leaves and stopping the process of oxidation before it could begin. The result is a tea that is both delicate and refreshing in flavor, but complex and dynamic as it brews, with great floral and fresh pea shoot and soy bean notes, as well as lingering minerality akin to limestone and a chestnut-like earthiness.

Brewing Suggestions

While this tea is a fairly forgiving tea, it is best to brew Yúnwù in either a porcelain gaiwan or glass vessel. A suggested 3-5 grams in a 4-6oz porcelain gaiwan, with the first steeping going into the vessel at 80C/176F for about 1-3 minutes will produce a sweet, complex profile. Leaving the lid off of the gaiwan during much of the steeping helps to further cool the water, resulting in a more balanced cup. For subsequent resteepings, adjust the temperature slightly higher and allowed for a slightly longer steep time. In total, one should be able to get 6-8 steepings.
